Fish farming is a water business before it is a farming business. We manage ponds, water quality and stocking density closely, because that is what makes harvest sizes repeatable.
The result is a supply line that holds up in peak season instead of thinning out exactly when demand is highest.

We produce fish across managed ponds and harvest to size rather than to a fixed date. That is what makes grades repeatable through the year instead of only after a single harvest.
Water quality is the whole business. Oxygen, pH and ammonia are monitored continuously, ponds are stocked at a density the water can actually carry, and corrective action is logged when it is taken.
Both, and both are handled in-house. Harvests are timed to size so the buyer gets the grade that was ordered rather than whatever the pond yields on the day.
That is the point of the operation. Stocking is staggered so the supply line holds up in peak season instead of thinning out exactly when demand is highest.
